Sologne sandy top soil over low ph clay sub-soil. This terroir of Oisly allows warming of the grounds and a good water supply giving a wonderful aromatic touch.
Cold pre-fermentation maceration with very gentle extraction by punching the cap. 8 to 10 days vatting in concrete tanks at controlled temperatures. Malolactic fermentation carried out in oak barrels. Aging for 8 to 10 months in barrels.
The Parenthèse Rouge is the expression of a wonderful, often overlooked grape variety, typical from Loir et Cher, Pineau d'Aunis. Manual harvesting, optimal maturity and very gentle extraction allows this Pineau d'Aunis to truly express its true characteristic qualities - complimentary aromas of spices and pepper with a nice roundness thanks to aging in oak barrels.
