Fattoria Mani di Luna was founded by three friends (Rocco, Simone and Alessandro De Filippis) that started managing a 30 hectare farm in Umbria just out of pure passion and love for agriculture and nature.

We are based in Torgiano, between 200 and 350 meters above sea level, an area where vines have been cultivated since the time of the Etruscans. The vines are planted in sandy soil which is rich in minerals and sediments left by the ancient lake Tiberinum, above a layer of sandstone.

We have 7 hectares of vineyards in total, of which 3 hectares of old vines which were planted between 1970 and 1980; the other vine- yards were planted between 2005 and 2012. We grow only native grape varieties such as Sangiovese, Grechetto, Trebbiano, Malvasia, Barbera and Sagrantino.

All our land is organically farmed and certified by Suolo e Salute. Since 2012 we have started to practice biodynamic agriculture using herbal teas, 500, 501 and biodynamic compost. We do the dynam- ization by hand and spray the 500 and 501 with a small shoulder pump. We fertilize the soil of the vineyard with green manure, using legumes and other plants in order to feed the soil and stimulate its biodiversity. We follow Maria Thun’s biodynamic calendar for tilling the soil, sowing, transplanting and for decanting in the cellar.

Our wine-making methods require close physical contact with the raw material, the grapes; by using our hands and respecting the lunar cycles we follow the transformation of grapes into wine. The grapes are harvested by hand in 18 kg boxes. The wines are produced with traditional methods such as manual de-stemming and crushing of the grapes by female feet. The fermentations are conducted without adding selected yeasts and without temperature control. We add only small amounts of sulphites and no other chemical product, in order to express the terroir in a natural way.

Artisan-Cosmic Vinification
Our artisanal vinification methods require close physical contact with the raw material, the grapes; through our hands and respecting the lunar cycles we support the transformation of grapes into wine.

The grapes are harvested by hand in 15 kg boxes by carrying out a careful selection in the vineyard. Most of the grapes are de-stemmed by hand in order to make the operation softer and more delicate than that performed by machine. Then in a festive atmosphere we dance on the grapes to transmit the right energy to the must and let it ferment spontaneously. After various experiments, in fact, we have found that pressing with the feet, combined with manual de-stemming, is the best method to preserve and enhance the qualitative characteristics of the starting grapes. Our white wines are partly macerated briefly on the skins and partly pressed in whole bunches very softly on vertical wooden presses.

We only use indigenous yeasts present on the skins, using the "pie de cuve" method to avoid uncontrolled fermentation. Once the must has become wine, it is decanted into fruit days following the lunar calendars and spends all winter on its fine lees which are brought back into suspension by weekly batonnage in order to ensure greater stability and richness to the wines.

The bottling is preceded by decanting alone, dictated by time and constellations, designed to clarify the wine, without carrying out any type of clarification or filtration. Only if it was not possible to clear the wine naturally we filter the wine with very large coarse filters in order not to lose the characteristics of volume and body given by prolonged contact with the fine lees. We only add small doses of sulphites without adding any other oenological chemicals.

The wines live in vitrified concrete and stainless steel containers. We are also experimenting with small terracotta jars, which will be used in the future if we like the results achieved. We use quartz crystals of various species in refinement depending on the wines to refine the aromas and give a particular energetic characteristic to the product (at least we like to think so).

We make wine bearing in mind that the fundamental element for producing quality wines is the passion, love and careful attention we give to wines, considering them a bit like our children.
